Millet is a major food grain that has been cultivated since the beginnings of agriculture. It was first grown in China and other parts of Asia over 10,000 years ago. Related to sorghum, millet exists in many varieties, including Foxtail, Proso, Finger Millet, and Pearl, which produces the largest seeds and comprises 40 percent of the world’s production.

Millet is non-glutinous and especially easy to digest. Like buckwheat and quinoa, it is not acid-forming and is ranked as one of the least allergenic and most digestible of food grains. You will find that our AgVantage Naturals™ Millet Flour is an excellent addition to a gluten-free diet and blends well with other flours. Millet’s sweet, nut-like flavor and fine texture make it ideal for use in breads, tortillas, pancakes, and other baked goods.

Much like sorghum, gluten-free millet is highly nutritious. With their hulls removed, ready for processing, millet grains look like very small yellow spheres. Just one-third of a cup contains 4 grams of protein and 15 percent of the RDA of iron. Millet is also high in B-complex vitamins, such as niacin, thiamin, and riboflavin. AgVantage Naturals Millet Flour offers you high fiber content and is rich in magnesium, potassium, and phosphorous. Other nutrients in the mix are vitamin E, lecithin, and the essential amino acid methionine. Gluten-free millet also contains phytochemicals, such as phytic acid, which is thought to play a role in lowering cholesterol, and phytate, which has been linked to reduced cancer risk.

In the field, millet is a tall annual grass that is similar to maize in appearance. It suits the modern practice of green, reduced-input agriculture. The plants vary somewhat based on their variety, but all have low moisture requirements and grow well even in poorly fertilized and dry soils. Millet flourishes both in hot climates with short rainfall periods and in cool climates with brief, warm summers. Millet seeds can develop into mature plants ready for harvest in as few as 65 days, making millet ideal for multi-crop farming.
